If there's something that they won't let you see, I suggest NOT going back. This ain't Patriot Act horsewaste.
No, they do NOT have to drain the gas. What they have to do is unplug the harness connector to the sensor (sending unit), and see if there's proper voltage coming TO the sensor, and then, check to see if the ground will ground out a 12V (or 5V) voltage source. Tell them your garden needs no fertilizer.

You've probably only deleted it from the ECM/PCM until it goes closed loop again (warmed up), and gets the [false] reading again. When it does, get the wiring diagram and specs for the harness connector circuit, and put a multimeter to the leads in the connector.
