OK -- So we can answer our own question. We found this link on the site:
Index of /FSMs/Nissan/Maxima/2000
An enormous help. On our 2000 model there were 2 pairs of pesky 12 mm bolts securing the plenum on brackets at the back. After a struggle we removed these, plus numerous 10mm bolts on top of the plenum, plus the front bolts and nuts (plus several vacuum and cooling hoses on the right and around the throttle body) and and we were able to wrestle it free. (When I come to rebuild this, I shall replace every snap-clamp with a decent screw clamp!!).
So now we have the engine top apart. Any comments or suggestions on IACV / EGR / Other maintenance / easy worthwhile replacements would be welcome -- Thanks,

Rob & Seth
